INGREDIENTS:
• 1 large zucchini
• 1 tablespoon parmesan cheese
• ½-teaspoon lemon zest
• ¼-teaspoon kosher salt
• 1 dash black pepper (smoked black pepper is best!)
• 1 teaspoon extra virgin olive oil
INSTRUCTIONS:
Using a large zucchini, slice into ¾-inch discs. Brush both sides with extra virgin olive oil. Salt and
pepper both sides and place on a hot grill. Leave it on the grill for about 2 minutes so you get some
nice grill marks. Flip over and add the lemon zest and parmesan cheese. Grill for 2 more minutes, and
remove from grill. Give the zucchini a couple of minutes to rest, and start eating.
