Can rich and creamy be healthy? It can if it’s a rich and
creamy avocado! Along with a rich taste, avocados are
rich in omega-3 fatty acids, which help lower cholesterol
and improve heart health.

INGREDIENTS:
• 6 slices whole grain bread
• 2 avocados
• 1 tomato (optional)
• 1 bunch spinach or lettuce, finely chopped
• 1 package low-fat shredded cheese (your choice)
• 1 bottle pico de gallo or other salsa (optional)
INSTRUCTIONS:
Take the slices of bread and cut into fourths. Toast until crispy and let cool. Take avocado, tomato
and spinach (chopped very finely) and mix together until smooth. Melt your cheese with the salsa
(optional). Take the fourths of cooled toast and put the mixture of avocado, tomato and spinach on
top. Add cheese and/or salsa mixture as a topping and enjoy.
