INGREDIENTS:
• 1-½ cups graham cracker crumbs
• 1/3-cup reduced-fat margarine
• 3 to 4 bananas
• 1 box reduced-fat cream cheese
• 1-½ cups low-fat milk
• 1 box sugar-free vanilla pudding
• 2 cans crushed pineapple
• 1 tub frozen lite or fat-free whipped cream
INSTRUCTIONS:
Mix graham cracker crumbs and margarine with fork or pastry cutter until margarine is cut into crumbs.
Wet fingers and press mixture into a 9x12 glass baking dish. Slice bananas and spread evenly over
crumb mixture. Beat softened cream cheese until very smooth and gradually add milk, beating until
smooth. Add pudding mix and beat 1 minute or until mixture begins to thicken. Spoon evenly over ba-
nanas and spread with rubber scraper. Spread drained pineapple over the pudding layer. Spread thawed
whipped topping over pineapple layer with rubber scraper, making sure to spread to edges of the baking
dish. Refrigerate at least one hour—but refrigerating three or more hours is best.
