The ultimate peanut butter cookie, this snack will
keep hunger away with the high-fiber oats, give
you energy with high-protein peanut butter and
satisfy your sweet tooth!

INGREDIENTS:
• ¾-cup whole wheat flour
• ¾-cup old fashioned oats
• ½-teaspoon salt
• ½-teaspoon baking soda
• 1 cup natural smooth peanut butter
• ½-cup honey
• 1 egg
• 2 teaspoons vanilla
• ¼-cup brown sugar
• 1 teaspoon cinnamon
• Sunflower seeds
INSTRUCTIONS:
Preheat oven to 375 degrees. Combine brown sugar, whole wheat flour, oats, salt, baking soda and
cinnamon. Set aside. Finely chop sunflower seeds. Set aside. Combine peanut butter, honey, egg and
vanilla. Add to dry mixture and mix. Cool in the refrigerator for 20 minutes. Scoop 1 teaspoon of bat-
ter, form ball and roll in sunflower seeds. Place on a parchment-lined cookie/baking sheet. Flatten with
fork. Bake at 375 degrees for 8-12 minutes—the edges will be slightly browned. Be careful not to
burn as honey browns fast!
