No more expensive store-bought energy bars that taste
like cardboard. Take a few minutes to make these luscious
bars that feature the super-nut—almonds—with vitamin E,
calcium, magnesium and potassium, plus lots of protein
and fiber.

INGREDIENTS:
• 2 cups semi-sweet chocolate
• 1 cup dried cranberries
• 2 cups unsalted roasted almonds
• 1 cup toasted sweetened coconut
• 1 cup instant oats (toasted)
• ½-cup honey
• ½-cup almond butter
INSTRUCTIONS:
Melt the chocolate and pour it into a 6x10 casserole dish. Coarsely chop almonds and mix together
the chopped almonds, cranberries, oats and coconut. Combine the honey and almond butter,
microwave for 20 seconds and mix well. Add the honey/almond butter mixture to the dry ingredients.
Add the mixture to the casserole dish and press down lightly to set. Refrigerate for 30 minutes. Cut
into 2-inch squares.
