mashed potatoes. The garlic adds flavor and helps

INGREDIENTS:
• 2 baking potatoes
• 2 tablespoons olive oil
• 1 tablespoon minced garlic
• Salt
INSTRUCTIONS:
Bake potatoes in the microwave for 6 to 8 minutes until they are done. Peel and mash the pota-
toes with a fork. In a skillet, add 2 tablespoons of olive oil and 1 tablespoon of garlic. Lightly brown
the garlic. Add the mashed potatoes to the skillet and salt to taste. Lightly brown the potatoes and
serve hot.
