This cauliflower dish will give you your mashed potato
fix without the carbohydrates and starch. Plus, cauli-
flower is rich in vitamin C and several anti-cancer
phytochemicals that help fight cancer cells and
prevent the growth of tumors.

INGREDIENTS:
• 1 medium head cauliflower
• Salt and pepper to taste
• 2 tablespoons low-fat sour cream
• ¼-cup skim milk
• Grated cheese
INSTRUCTIONS:
Boil the cauliflower about 10 minutes until tender. Drain all water. Mash the cauliflower with masher or
use food processor. Add sour cream and milk and mix well. Add salt and pepper to taste and finally
top lightly with grated cheese. For a slightly different taste, add a little chicken broth.
