Brian came up with this recipe as a healthy alternative for
the classic dish: “I prepared it one day and it was such a
hit with my family that I had to double it so we can have
leftovers. I used 5 orange peppers in the photo for each
letter in DEPOT.”

INGREDIENTS:
• 4 medium-large bell peppers
(use any color that you want)
• ¼-cup golden raisins
• 8 ounces extra-lean ground turkey
• 28 ounces marinara sauce
• 1 zucchini
• 1 tablespoon red wine vinegar
• ½-cup quick barley
• ¼-teaspoon ground cinnamon
• ½-teaspoon ground cumin
INSTRUCTIONS:
Combine marinara sauce, cumin, vinegar and cinnamon in a large bowl and scoop 2 cups of this mix-
ture into a 6-quart crock pot. Cut the tops off of the peppers and keep them. Remove the seeds from
the peppers. Add the turkey and other ingredients to the remaining sauce and mix well. Spoon the in-
gredients into the peppers and stand them up in the crock pot with the tops back on them. Close the
crock pot and cook on low for 5 hours for slightly firm peppers, to 6 hours for more tender ones. The
pepper is the star of this meal, so serve it in a bowl, resting in some of the delicious sauce.
