These heart-healthy tomato balls are delicious as a
side dish with dinner or a snack. The lycopene found
in tomatoes is a vital antioxidant that helps in the
fight against cancerous cell formation.

INGREDIENTS:
• 2 fresh tomatoes
• 1 bag brown rice for the microwave (any brand)
• 1 tablespoon flour
• Salt and pepper to taste
• Garlic and/or onion powder to taste (optional)
• ½-cup bread crumbs
• ¼-cup canola oil
INSTRUCTIONS:
Cook the brown rice bag in microwave. Dice tomatoes into small squares. Drain as much liquid as
possible. Sprinkle tomatoes with small amount of flour to dry up liquid. Mix the tomatoes into the
cooked brown rice. Season with salt, pepper, onion powder, garlic powder and any other seasoning
you like. Form the tomato/rice mixture into balls about the size of a baseball and roll in bread crumbs.
Using wet hands, helps the ball form and the bread crumbs stick. Lightly fry in canola or other light oil
until golden brown.
