This healthy crunchy salad is chock full of fiber,
omega-3 fatty acids and antioxidants. The vitamin E
in the sunflower seeds helps prevent cardiovascular
disease and has significant anti-inflammatory effects
that reduce symptoms in asthma and arthritis.

INGREDIENTS:
• 4 cups broccoli
• 4 cups cauliflower
• ½-cup unsalted sunflower seeds
• ¼-cup chia seed (optional)
• 1 cup bell pepper
• ¼-cup olive oil
• ¼-cup red wine vinegar
• ½-teaspoon black pepper
• ½-teaspoon kosher salt
INSTRUCTIONS:
Chop broccoli, cauliflower and bell pepper into small pieces (½-inch or less) and place in a large
mixing or salad bowl. Mix in sunflower and chia seeds. Then add olive oil and red wine vinegar and
mix. Add black pepper and salt to taste.
