Just four ounces of salmon contains at least two
grams of omega-3 fatty acids that promote heart
health and prevent inflammation. This is more omega-
3 fatty acids than the average U.S. adult gets from all
food over the course of several days.

INGREDIENTS:
• 4 frozen skinless salmon cakes, thawed
• ½-package frozen chopped spinach, thawed and squeezed dry
• 2 eggs
• ¾-cup whole wheat bread crumbs
• 1 tablespoon Old Bay seasoning
• ½-teaspoon dried oregano
• ½-teaspoon dried basil
• 2 tablespoons finely chopped onions
INSTRUCTIONS:
Puree salmon in food processor and transfer to large bowl. Pulse spinach in food processor to
break up and add to salmon. Add remaining ingredients and mix by hand and form eight 4-inch
patties. Coat non-stick skillet with cooking spray and place on medium-high heat. Brown cakes
2-3 at a time and transfer to a coated cookie sheet. Bake at 350 degrees for 15 minutes. Serve
with fresh lemon slices.
