Kale adds lots of nutrition and almost no calories to this
vegetarian delight that Jessica says is “packed with veg-
gies, hummus and cheese, but grilled zucchini is the hero
in this healthy wrap!”

INGREDIENTS:
• 1 zucchini
• 1 tablespoon olive oil
• 1 tomato, sliced
• 1/8-cup sliced red onion
• 1 cup kale
• 2 slices white cheddar or gouda cheese
• 2 tortillas
• 4 tablespoons hummus
INSTRUCTIONS:
Heat skillet or grill to medium heat. Remove the ends from the zucchini and slice lengthwise into
strips. Toss sliced zucchini in olive oil and sprinkle with salt and pepper. Place sliced zucchini
directly on skillet/grill and cook for 3 minutes, turn and cook for 2 more minutes. Set zucchini
aside. Place the tortillas on skillet/grill for one minute, or until brown marks are visible and
tortillas are pliable. Remove tortillas from skillet/grill and assemble wraps with 2 tablespoons
of hummus spread onto each tortilla, one slice of cheese, half of the zucchini slices, ½ cup
kale, sliced red onion and tomato slices. Wrap tightly and enjoy immediately!
