Tabouli is a tasty and exotic alternative to salad! And
tabouli is wonderfully nutritious, including the parsley.
Just two tablespoons of parsley have a whopping 153%
of the recommended daily amount of vitamin K, which is
necessary for strong bones and also prevents calcium
build-up in our tissue that can lead to cardiovascular
disease and stroke.

Prepare the tabouli mix according to the directions on the box (add 1-¼ cups boiling water and 2
tablespoons olive oil to the dry mix), blend together in a mixing bowl and put in the fridge to set. Wash
all produce well! Remove parsley and mint leaves from the stems and chop up finely (or mix in food
processor). This takes the most time... don't lose heart! Chop up tomatoes to desired size (typically
diced). Chop up green onions into ½-inch pieces (using the light green parts only; discard the darker,
rubbery ends). Add everything to the tabouli mix. Squeeze the juice of both lemons into the mix. Add
salt to taste. Mix well and enjoy! (I prefer it at room temperature, but it must be stored in the fridge.)
