Broccoli is good for your cardiovascular system and your
immune system, and has anti-inflammatory and even
cancer-preventing properties. This omelet combines
the benefits of broccoli with the protein in eggs.

INGREDIENTS:
• ½-cup chopped broccoli
• 1 egg, beaten
• ¼-cup low-fat cheese, shredded
• 1 tablespoon oil
INSTRUCTIONS:
Cut or chop your broccoli to smaller than bite-size pieces and set aside. Grate your choice of cheese
and set aside. Beat one egg in a small bowl. Add one tablespoon of your choice of oil to small hot pan
on medium-low heat. Once the oil is up to temperature, add the beaten egg. Evenly, roll the pan to
coat the egg on bottom of pan. Once the egg is mostly cooked, flip the egg (like a pancake). Add the
chopped broccoli and most of the shredded cheese on half of the egg. Fold the empty half of egg
over the covered half. Dress the top with any leftover cheese. Let set for 5 seconds before sliding
omelet onto a plate.
