my diabetic diet. The soy chorizo tastes like and has the
texture of real chorizo without the fat and cholesterol.”

INGREDIENTS:
• 4 ounces soy chorizo
• 20 low-carb tortillas
• 5 cups Egg Beaters
• 3 cups chopped onion
• 3 cups chopped bell pepper
• 3 cups fat-free cheddar cheese
• Salsa
• Olive oil
INSTRUCTIONS:
Heat pan to medium heat and add small amount of olive oil, then add the soy chorizo. Heat a second
dry pan or flat iron to heat tortillas. Add chopped onion and bell pepper to liking and then add Egg
Beaters. Cook eggs until firm, remove from heat and sprinkle cheese on top of eggs. Cook tortillas to
liking and then place the eggs inside the tortilla. You can add salsa on the top or as a side.
