WITH ITALIAN
CHICKEN SALAD

INGREDIENTS:
• 6 large tomatoes
• ½-cup red bell pepper, minced
• ½-cup celery, finely chopped
• ½-cup onion, finely chopped
• 1 cup fat-free cheddar cheese, finely shredded
• 2 cups cooked chicken, chopped
• 1 teaspoon garlic powder
• ½-teaspoon dried oregano
• ½-teaspoon dried basil
• ¾-cup fat-free Italian dressing
INSTRUCTIONS:
Cut ½-inch off top of each tomato. Scoop out pulp from tomatoes and chop. Turn tomatoes upside
down on paper towels to drain. In a medium bowl, combine chicken, chopped tomato, bell pepper,
celery, onion and cheese. In a small bowl, whisk Italian dressing with garlic powder, basil and oregano.
Pour over chicken, tossing gently to coat. Spoon chicken salad evenly into tomatoes. Refrigerate or
serve immediately.
