STRAWBERRY BREAD
In this healthier version of strawberry
bread, Diana uses unsweetened applesauce
to cut the sugar in half and add enough
moisture so that the amount of oil can be
reduced. This recipe makes two loaves, and
the strawberry bread freezes well.

INGREDIENTS:
• 3 cups all-purpose flour
• 1 cup sugar
• ½-cup applesauce, unsweetened
• 1 teaspoon baking soda
• 1 teaspoon salt
• 1 teaspoon ground cinnamon
• 4 eggs
• ¾-cup vegetable oil
• 2 cups fresh strawberries, chopped
INSTRUCTIONS:
Preheat oven to 350 degrees. Combine the flour, sugar, baking soda, salt and cinnamon in a large bowl.
Combine remaining ingredients in a medium bowl. Add these ingredients to the dry ingredients. Stir until
well combined. Divide the mixture into 2 greased 9x5x3-inch loaf pans. Bake for 1 hour. Remove from
oven and cool about 10 minutes. Remove from the pans and cool on a wire rack. Yields 2 loaves.
