INGREDIENTS:
• 2 eggs, lightly beaten
• ½-cup red, yellow or orange pepper, diced
• 1 tomato, diced
• 1 cup spinach, chopped
• 1 onion, diced
• 1 tablespoon chili powder
• 1 tablespoon cumin
• 2 teaspoons coconut oil
• ½-teaspoon garlic, minced
• 1 pinch pepper
• ¼-teaspoon sea salt
INSTRUCTIONS:
Sauté diced onion and pepper in coconut oil until soft. Add diced tomato and eggs and cook until
eggs are set. Add seasonings and spinach and toss until spinach is cooked.
