ZIPPY RADISH
SALAD
Home gardeners love radishes for their
quick growing time (usually taking only
30-45 days from seed to radish). You’ll love
radishes because they are high in fiber, low in
calories and low on the glycemic index, making
them a great part of any weight-loss diet.

INGREDIENTS:
• 2 cups radishes, thinly sliced
• ½-cup Swiss cheese, cubed
• 2 green onions, thinly sliced
• 1 garlic clove, minced
• 1 tablespoon tarragon vinegar
• ½-teaspoon dijon mustard
• ¼-teaspoon salt
• 1/8-teaspoon pepper
• 3 tablespoons olive oil
INSTRUCTIONS:
In a bowl combine radishes, cheese and onions. In another small bowl make the dressing by combining
garlic, vinegar, mustard, salt and pepper; whisk in oil until smooth. Pour the dressing over radish mixture;
toss to coat. Chill for 2 hours.
