INGREDIENTS:
• 2 large eggs
• ¼-cup dark brown sugar
• 1 teaspoon vanilla extract
• 3 tablespoons water
• ¼-cup canola oil
• 1 cup almond meal
• 1 cup dates, chopped
• 1½ cups unbleached flour
• 2 teaspoons baking powder
• 1 pinch salt
INSTRUCTIONS:
Preheat oven to 350 degrees. Stir eggs and brown sugar together in a large bowl until well mixed. Add oil,
water and vanilla extract, stirring after each addition. In another bowl, combine flour, baking powder, salt,
almond meal and chopped dates. Add the date mixture to wet mixture in 2 batches, stirring to thoroughly
combine after each addition. Line a 9 x 13-inch cookie pan with raised sides with parchment paper.
Spread batter evenly and bake for 20 minutes until a toothpick inserted in the middle comes out clean.
Let cool completely and peel from parchment paper. Cut into squares and enjoy!
