For Mexican night at home, make this
wonderful dinner that the whole family
will love. These fajitas are low in fat and
calories and high in flavor.

INGREDIENTS:
• 4 boneless, skinless chicken breasts (about 6 ounces each)
• 1 green bell pepper, sliced
• 1 red bell pepper, sliced
• 1 yellow bell pepper, sliced
• 1 red onion, sliced
• 1 tablespoon taco seasoning, or to taste
• 1 tablespoon olive oil
INSTRUCTIONS:
Preheat oven to 375 degrees. Place the chicken breasts in a shallow baking dish and sprinkle with
taco seasoning. Top the chicken with the peppers and onions and drizzle olive oil on the veggies.
Bake in the oven for about 45 minutes until the chicken is cooked all the way through.
