BLUEBERRY MUFFINS
These Weight Watchers muffins are great
for breakfast or an afternoon snack!

INGREDIENTS:
• 1¾ cups all-purpose flour
• 4 teaspoons sugar
• 2 teaspoons baking powder
• ½-teaspoon salt
• ¾-cup blueberries
• 1 cup fat-free milk
• 1 egg
• 4 teaspoons unsalted butter, melted
• Cooking spray
INSTRUCTIONS:
Preheat the oven to 400 degrees. Spray a 12-cup muffin tin with non-stick cooking spray. In a large
bowl, combine the blueberries, flour, sugar, baking powder and salt. In a small bowl, combine the
milk, egg and butter, Pour over the flour mixture, stirring just until blended (do not overmix).
Spoon the batter into the cups, filling each about two-thirds full. Bake until a toothpick inserted in
a muffin comes out clean and the muffins are golden brown, 20-25 minutes. Cool in the pan on a
rack 5 minutes; remove from pan and serve hot or at room temperature.
