EGGPLANT BRUSCHETTA

INGREDIENTS:
• 1 eggplant
• ¼-teaspoon Mrs. Dash
• ¼-teaspoon sea salt
• ¼-teaspoon garlic powder
• 4 tablespoons extra light olive oil
• 2 tablespoons balsamic glaze
• 5 small tomatoes
• 1 tablespoon parmesan cheese
INSTRUCTIONS:
Combine Mrs. Dash, sea salt and garlic powder in a small bowl. Slice unpeeled eggplant diagonally
¼-inch thin. Brush both sides with olive oil. Arrange the eggplant on non-insulated cookie sheet and
brush with balsamic glaze. Then sprinkle with salt/garlic powder mixture and top with finely chopped
tomatoes. Broil for 7 minutes. Remove from broiler and sprinkle with parmesan cheese. Serve warm.
