antioxidant-rich kale and fiber-rich apples.

INGREDIENTS:
• 8-10 ounces kale
• 1 apple
• ¾-cup chopped almonds
• Juice of 1 lemon
• 2-½ tablespoons extra virgin olive oil
• 1-½ tablespoons honey
• 1/3-cup grated parmesan cheese
• 2 dashes salt and pepper
INSTRUCTIONS:
Remove all of the hard stems on the kale, then chop the kale or pulse in a food processor until finely
chopped. Chop the almonds and toast until lightly golden brown. Chop the apple. Add the apple,
almonds and parmesan cheese to the kale and mix well.
Mix the lemon juice, olive oil, and honey in a small bowl. Pour over the kale salad when ready to serve.
Add more honey or lemon juice to taste. Add salt and pepper to taste.
