HEALTHY CHiCKEN SALAD WiTH APPLES AND CRANBERRiES

INGREDIENTS:
• 2-½ cups cooked chicken, chopped
• 3 stalks celery, chopped
• 1 cup chopped apple
• ¼-cup dried cranberries
• ½-cup non-fat plain Greek yogurt
• 2 tablespoons light mayonnaise
• 2 teaspoons lemon juice
• 2 tablespoons chopped parsley (optional)
• Salt and pepper to taste
INSTRUCTIONS:
Place chicken, celery, apple and cranberries in a medium bowl and stir to combine. In a small bowl
stir together the yogurt, mayonnaise and lemon juice then add to chicken mixture and stir well. Stir in
parsley if desired and season to taste with salt and pepper.
