INGREDIENTS:
• 2 cups lettuce, chopped
• 2 tablespoons onion, chopped
• ½ medium avocado, chopped
• 4 tablespoons chunky salsa
• ½-cup non-fat pinto beans, cooked
• 2 tablespoons cilantro, chopped
• 2 tortillas (corn is healthier than flour)
INSTRUCTIONS:
Mix lettuce, onion, avocado, cilantro and salsa in a large bowl until evenly coated by the salsa. Spread
half of the beans on each tortilla, fill with vegetable mix and wrap each burrito-style. Olé!
